Simple Fettuccini Recipe

My father made up a similar dish to this while I was visiting and I modified the recipe a bit and served it to [livejournal.com profile] tirani. She deemed it tasty and suggested I post and share so….



-10 Oz Fettuccini (Any long noodle will probably work here)
-1 can Crushed Tomatoes
-1 cup white wine
-1 tbsp Olive Oil
-2 tablespoon Brown Sugar
-4 slices of prosciutto cut into ½” squares.
-Fresh Chopped Garlic (3-5 cloves to taste)
-Basil, Oregano, Cayenne Pepper and Salt to taste
-Crumbled Feta
-Water for boiling pasta

1) Combine crushed tomatoes, white wine, brown sugar, garlic, basil, oregano, cayenne pepper and salt in a saucepan, heat and stir occasionally
2) Boil pasta in large pot water and olive oil until al dente (Basically I start checking the pasta after 2 minutes until it’s the consistency I want)
3) Add pasta, sauce, prosciutto and feta in bowl.

Alternative Sauce
This is the sauce my father originally used and makes for a good alternate
-Substitute 1 can Crushed tomatoes for 1 can diced tomatoes and rather than add 1 cup of white wine add 1/2 cup of white wine and 1/2 cup of chicken stock. The same seasonings above are used. You may need to adjust the liquid content up or down a bit depending on how exactly you want it – the goal is to have liquid to moisten the noodles and provide flavor but not such that they’re swimming in it.
